AN INDULGING, TREAT-YOURSELF RECIPE FROM BAILEYS

There’s only one thing better than making your own cheesecake, and that’s making a Baileys Salted Caramel (no-bake) cheesecake that you can quite literally forget about for hours on end. And, to be honest, the longer you leave it (within reason, gurl), the better it ends up being. 

Now that’s a salted caramel slay. 

RECIPE (MAKES 1)

• 100 ml Baileys Original Irish Cream Liqueur

• 300g Ready-made custard

• 300g Cream cheese

• 1 Packet of digestive biscuits

• Pecan nuts

• Caramel sauce

(Oh, and FYI for those needing allergy information, this recipe does contain dairy and nuts).

NOTE: THIS RECIPE CONTAINS ALCOHOL

METHOD

This recipe is for those of us who love to have a crush…only this time we’re not talking about a crush on some dumb boy! No, instead we’re talking about the first step of this recipe being to crush your biscuits up so that they form crumbs. 

Pro-tip: place the biscuits in a sandwich bag and use a wooden spoon/rolling pin for a mess-free crushing experience.

Next, whip your cream cheese and Baileys until combined. Be sure to whip it, whip it real good!

From here, layer the crumbed biscuits, cream cheese/Baileys mixture, ready-made custard, and caramel sauce in a short jar, and then leave that bad boy in the fridge for at least six hours. Alternatively – and this is only for the heroes with Olympic-level self-restraint – leave it in the fridge overnight to produce optimal results.

Immediately before serving, garnish your masterpiece with crushed pecans. Gorgeous.
