AN INDULGING, TREAT-YOURSELF RECIPE FROM BAILEYS
It’s no secret that the majority of us are partial to a delicious summer berry moment, nor are we ones to shy away from the mess that is life. So a decadent, indulgent, treat-yourself recipe that combines the two, well honey, you can bet your bottom dollar we’re going to get around it!
This recipe is summer inspired, it’s up to its brim with berries and like us, it’s super sweet!
We are of course bringing you this devilishly delish combo with Baileys Berry Eton Mess.

INGREDIENTS (SERVES FOUR)
• 200ml Baileys Summer Berry Pavlova Flavoured Liqueur
• 100g meringue kisses
• 250g raspberries
• 250g strawberries, roughly chopped
• 125g blueberries
• 75g caster sugar
• 300ml thickened cream
• Fresh mint leaves to decorate
THIS RECIPE CONTAINS ALCOHOL.
METHOD
In a bowl, roughly crush the meringue kisses and set aside…you’re certainly not done with these ones yet!
Next, and in a blender, mix 3/4 of the chopped strawberries and half the fresh raspberries until pureed.
Now, pour (baby, pour!) all that delish berry puree into a pan with the caster sugar, and let it bubble away on a slow heat for 2-3 minutes until slightly reduced and syrupy.
Next, take a breather, it’s time to set this one aside and leave it to go cold.
Separately, use a mixer to whip up the thickened cream until stiff peaks form, and then in your 4 serving glasses, it’s time to make like early 2000’s celeb fashion and absolutely LAYER it up babe!
First, pour 25ml of Baileys Summer Berry Pavlova into each glass, before evenly layering each glass with the whipped cream, some berries (blueberry, raspberry and strawberry), crushed meringue and strawberry puree.
Finally, drizzle another 25ml of Baileys Summer Berry Pavlova on top, and then finish with mint leaves to decorate. Now all that’s left to do is enjoy!
